During the holidays, we took our family members visiting from out-of-town to Harmony Vineyards located in Head of the Harbor, Long Island, New York. The drive to the vineyards along Harbor Road is very scenic taking you through a beautiful part of the North Shore of Long Island.  We were pleasantly surprised when we arrived at the vineyard and pulled up to a beautifully restored historic house.

We love to camp in the Catskills.  The area of Kingston/Phonecia/Saugerties is only a three and a half hour drive pulling our travel trailer from Long Island which makes it an easy weekend trip.  There’s hiking, fishing, tubing, kayaking and just spending the day exploring the beautiful winding roads.  It was on one of these “exploring days” that took us to a beautiful waterfall.

It happens every afternoon…just like clockwork…usually around 3:00 in the afternoon for me…that question pops into your mind…”What are we going to have for dinner?”  I quickly reach for my cell phone and google “What’s For Dinner?”

Try this easy-to-make Chicken with Green Beans and Potatoes.  I can honestly say it is so easy to whip up and has saved me countless times from having to drive through a fast food restaurant on my way home!  I promise your family will be asking, “How’d you make this?”

Instructions
  1. Pre-heat oven to 350 degrees
  2. Place chicken cutlets down the middle of a 9" x 13" pan (I also lined the pan with foil to make for easy clean up!)
  3. Add green beans on one side of the chicken cutlets
  4. Add cubed red potatoes on other side of chicken cutlets
  5. Sprinkle chicken cutlets with Lemon Pepper
  6. Pour entire bottle of Italian Dressing over potatoes, green beans and chicken cutlets
  7. Cover pan with foil
  8. Bake in a 350 degree oven for 1 hour or until potatoes are tender

Esopus River

One of my family’s favorite places to camp in the Catskill Mountains.  Pictured here is the Esopus Creek, a 64.5 mile long tributary of the Hudson River providing some of the best trout fishing, kayaking and tubing in the area.  One of our favorite campgrounds is Sleepy Hollow Campground located in Phonecia, NY  which sits right along Esopus Creek and has a 360 degree view of the Catskill Mountains.
